What's Up Wednesday

Hello out there!! Once again, I'm writing one of those, "Its been a while..." posts! I had ambitions to blog regularly at the beginning of the year, but time has gotten away from me! Today, I'm linking up with Shaeffer and Shay for What's Up Wednesday:



What we're eating this week:

Monday: Azzip Pizza did a give back night for our Church's mission trip, so we got pizza to-go and ate it at home. 
Tuesday: Spaghetti and meatballs. Had to break out our toaster oven because the oven is making our house too hot with no AC on yet
Wednesday: I'll be teaching my usual night class, so Lee and Liam will have leftover spaghetti. I always try to plan to have leftovers or something easy for them on Wednesday nights. 
Thursday: Grilled pork chops and sunflower crunch salad
Friday: Grilled steak, Brussels sprouts, and sweet potatoes
Saturday: Easter with Lee's family
Sunday: grilled teriyaki chicken and veggies, rice, and crab Rangoon 


What I'm reminiscing about:

Easter last year and how little Liam was! 



What I'm loving:

This awesome weather we've been having, minus the rain







What we've been up to:

My last post was in February, so since then we've



  • Taken my  niece and nephew skiing at Paoli Peaks
  • Lee and I took an adults only trip to Phoenix, AZ for a conference
  • Spent another weekend in March with my niece and nephew. We went to Sky Zone and spent an evening playing Ticket to Ride
  • Celebrated Easter with my family, and have one more Easter celebration coming up this weekend with Lee's family 
  • Completed teaching my first accelerated course at work, and also had my first teaching evaluation. Both went well! 
  • Visited my grandparents in St. Louis
  • Took a weekend trip to Chicago to celebrate my bff's son's 1st birthday. It's so fun to watch our babies grow up at the same time.
  • Took Liam to his first St. Louis Cardinal's game!



What I'm dreading: 

The gross amount of laundry I have to get caught up on this weekend...




What I'm working on: 

Lots of grading at work as I near the end of the semester



What I'm excited about:

Summer vacation at home with my little guy... less than 3 weeks away!!! 



What I'm watching/reading:

I haven't been watching much lately, but am still kinda keeping up with Grey's Anatomy, although its kinda blah these days. Listening to Girl, Stop Apologizing on audio book, and having a hard time getting into it. I think it's time for anew audio book. 



What I'm listening to:

Mostly listening to Garth Brook's Sirius XM station as well as The Message station, but of course if Liam's in the car, he wants nursery rhymes. 




What I'm wearing:

Lots of dresses and capris at work, despite my pasty, white legs. 


What I'm doing this weekend: 

Celebrating Easter with Lee's family, and getting caught up around the house. Maybe planting my garden if I can get Lee to find time to till it up for me.


What I'm looking forward to next month: 

SUMMER VACATION!! and my 30th birthday!
Can't wait to spend my days with this cutie. 



What else is new: 

All kinds of exciting things going on around here, and I'm hoping that once school is out, I can find time to blog again!

Weekend Recap: Snow Ski Edition

For Christmas, Lee and I told my niece and nephew that we'd take them skiing at Paoli Peaks. My niece had never been before, and we took my nephew once, probably 5 years ago, and he's been asking to go back ever since. No one else on my side of the family likes skiing, so we were excited to know that our niece and nephew wanted to learn how.

Friday afternoon I left straight from my faculty meeting and drove to pick up the kids. They live about 2 hours away, so once I picked them up, headed for my house. We grabbed a quick dinner at Subway when we were about halfway home. Once we got back to my house, we all fell asleep watching a movie.

Saturday morning we woke up bright and early. Lee made breakfast while I helped the kids make sure they had enough warm clothes and gear. We dropped Liam off at my in-laws' and hit the road. We asked a few people working at Paoli about young kids coming, and they said the youngest they've had ski is 2 years old. Liam will be 2 next winter, but we don't know if he will be quite ready. 3 might be a better age. We'll see.

We drove the 2 hours to Paoli Peaks, and got all bundled up. Lee and I took turns teaching the kids in the morning. They both got frustrated, and we got a little nervous thinking they might not enjoy it, but with more practice, they got the hang of it. Once they got their groove, we moved from the practice hill to the bunny slope.

After a few times down the bunny slope, we took a lunch break. After lunch we skiied some more, and even ventured to the family slope a few times. The kids did great! They were both so proud of themselves for figuring it out. Here's a few pics from us throughout the day:
